THE ORGANIC VEGETABLE GARDEN AND THE HERBS GARDEN ARE A LIVING LARDER, WITHOUT WALLS, WITH THE SKY ABOVE
Therefore it is an integral part of the Restaurant.
The chefs Danilo and Umberto “shop” in the vegetable gardens choosing products, perfumes and colors for their dishes.
It ‘something more than a Kilometer Zero. They are just a few meters to separate the kitchen to the vegetable gardens, the same as a few meters separate the kitchen to the dining room!
This production logic of the raw materials commits us even more, binding in the covenant of trust with our Guests.
The restaurant does not just choose the products and turn them into dishes: choose which products plant, how to grow them, when to pick them and how to enhance them. For this reason the Villa Giulia’s Restaurant is inextricably linked to seasonality and nature.
The joy of showing to the Guests the vegetable gardens where are grown the vegetables that they will eat and the capacity to guarantee their quality is one of the great pleasures that our job offers.
We feel the proud custodians of our land and of the authenticity of its flavors.
WHAT WE CULTIVATE AT VILLA GIULIA
To give you an idea, in the organic garden between the spring and the summer you can find various kinds of artichokes, asparagus, aubergines, courgettes, cucumbers, peppers, tomatoes as well as celery, spinach, onions, garlic, melons, watermelons and figs . Between autumn and winter is the turn of potatoes, carrots, various chard, chicory, fennel, celery, turnips, turnip greens, cabbage, brussels sprouts, broccoli, cabbage, pumpkins and persimmons.
The garden is no less important. Here we cultivate rosemary, sage, oregano, marjoram, basil, parsley, dill, lemon balm, various mints, calendula, borage, etc. Herbs are most luxuriant between spring and autumn, of course!
